Long-overdue announcement...
Two Whom It May Concern;
Calling it "zest" does not change the simple, inescapable fact that orange rind is not edible.
Thank you.
P.S. Coating it in chocolate is a violation of the 11th Commandment*.
*The Eleventh Commandment, "Thou Shalt Not Waste Chocolate" or "Thou Shalt Honor The Chocolate And Keep It Holy," was not given to Moses because the descendants of the Israelites would not encounter actual chocolate for several thousand years. Giving the commandment at that time would simply have caused a lot of confusion, probably having to do with carob, which would just be sad. Instead, the commandment was hard-coded into our genetic structure, left as instincually obvious for those who would later encounter the real thing. (This is why you should never trust anyone who does not like chocolate.)

I will have to disagree in regards to the rind though. It is clear that you do not cook. Some of THE most INCREDIBLE desserts are made using citrus rind... more often lemon or lime though.
I wish there was a way to send food online, then you could taste one of those and have no choice but to agree with me :-p

Though I realize you didn't intend it so, I must take at least some small measure of offense at that.
I cook. I bake. I started out with lunches, when I was a kid. I learned dinners. I learned cakes and breads and such. (There was this sugar-free carrot cake I adapted, back in my early teens...) I do not have my sister's skill with pies, but then, I've never really tried my hand at it. I don't have the greatest repetoire in the family, but I have put my own twist on a few simple meals.
I've encountered orange rind in cakes, marmalades, dinner sauces, chocolate, and probably a few other places. I do not deny its aroma, but its flavor (oversharp or all but missing, depending on the part of the rind) does not agree with me and as for the texture... it might as well be rubber.
Finely grated, used as a spice, in moderation... maybe. Bay leaves aren't edible, either, but they do add to the dish. But any good cook knows to remove them before serving.
Perhaps you could change my mind. I would be glad of the opportunity, and promise to keep an open mind.
Until then, however, my statement holds firm.
In any case... Glad you like my explanation. It's been around for some years now, but it doesn't come up often. Especially since I'm aware that some people can be rather touchy about the commandments...

And... Hmm... Don't normally cook with actual egg yolks (or cream, for that matter), but, in honor of the occasion, I'll give it a shot.
Just not sure when. We leave for Florida in a couple of days. Won't be back until mid-December. Might get a chance to try it there. If not, hopefully I'll remember when I get back.
(Though yeah... I generally prefer lime to lemon. About the only lemon-thing I like is lemon cake, which is yellow cake made with lemon pudding, more or less.)
I promise I'll try this. And let you know.
In the meantime... since you guard the recipe so well, I'll screen the comment. Least I could do.

iknow one person who doesnt like chocolate and one who is allergic. the one who's allergic is fun but psychotic, hence not entirely trustworthy. the other is genuinely not to be trusted. so far i see no reason to disagree with you ;)

My bro-in-law only likes white chocolate, so he has to work to earn real trust. ;)
