Lasagna came out well, after all. Aunt helped by doing much of the prep work, and Dad got back with the sauce and cheese just in time. Mom still didn't entirely approve of my choice of veggies, but otherwise it was well received all around.

Today's culinary adventure, then, was lunch. I'd thought of having leftover lasagna, but most of it was moved down the hall to where aunt is staying. Could have... but never mind. I decided to take a left turn.

A few years ago, I got a free sandwich maker from Coke Rewards (they even shipped it free, and when the package disappeared - I suspect it was misappropriated by someone who no longer works in the building's office - they sent me a replacement for free). All I had to do was what I do anyway - drink copious amounts of soda. (I hate plain water - it tastes awful and sometimes makes me queasy - and, being diabetic, I have to severely limit my sugar intake.)

So I poked around in the fridge and gathered up odds and ends and leftovers. Diced "mojo" chicken (marinated with garlic and lime and rotisserie roasted - a Publix specialty). Bits of ground beef (left over from the lasagna, hastily browned with a little garlic powder). Shredded cheese (the four cheese "Mexican blend" aunt had mistakenly purchased). Tobasco sauce. Powdered garlic and ginger. And then, a last second whim/inspiration, some chili (bought for me at the little place down the road when everyone else went out for lunch a couple of days ago). Mixed up and put between two slices of decent quality white bread (the wheat is too big/caloric, and has some seeds and such that probably wouldn't have blended well). Toasted and pressed into two triangular pockets.

I figured it was either going to be really good or a huge mess/mistake.

As it turns out... I think I reinvented enchiladas. Sort of. Or at least an odd improvised knock-off version.

Anyway, it was good.

And now I am full.

And happily not thinking about the year (old or new) with any contemplative depth.

*g* We have one of those things, I think. My brother loves putting stuff in it. I can think of at least one mixture that would work great--we do open-faced sandwiches on English muffins (toasted until the cheese melts), by chopping up vegetarian lunch meats (the corned beef is my favorite, but both the wham--veggie ham--and turkey work really well too) and onions, putting shredded cheddar cheese in, and mixing it with just enough mayo to hold it together. That would probably taste yummy in a sandwich maker. You're making me hungry now, lol. I'll have to try it out sometime.
