The problem with Harry Potter movies is that the books (particularly from the fourth on) are veritable tomes. Even with over two hours available, there isn't nearly enough time for everything. So entire subplots get slashed down to mere glimpses, given only a few minutes of screentime each, just so that they can at least try to fit everything in.

But the effects are still cool and the actors still good and the magic still there, so in the end, it's still good.

I totally agree. As movies, I've had a good time with them, and they've been worth the hubbub of the midnight showings and packed theatres. But there's unfortunately not enough time to pack in everything I'd love to see, and my friends who don't read the books miss out on a lot of important and interesting things.
